Protein Peanut Butter Protein Cookie Recipe (gluten-free, only 4 ingredients!)
This gluten-free protein powder peanut butter cookie has all of the great taste of a traditional peanut butter cookie, but none of the guilt. Takes just a few minutes to mix together a batch of warm, yummy cookies.

1-1/3 cups vanilla or peanut butter flavored protein powder (I use Syntha 6 Peanut Butter Cookie flavor and order it from Amazon)
1 cup natural peanut butter
1 teaspoon vanilla.
Crack eggs into a medium bowl and beat with a fork. Add remaining ingredients.
Form into balls (or use cookie scoop) and place on parchment-lined cookie sheet. Use fork to slightly flatten cookies with a criss-cross pattern.
Bake at 350 degrees for 10-12 minutes until cookies are set.
