"It's good, mom," said my 13-year-old son.  I kid you not when I tell you this is the highest possible praise from a fussy eater and connoisseur of McDonald's and Papa John's Pizza.  This simple and sumptuous crockpot gluten free beef stew is officially picky-kid-approved.  Best of all, today's #5MinuteRecipe can be prepped in less than five minutes so your crockpot does all the work!

I'll admit I hustled a little on this one, but I had my ingredients ready and slow cooker fired up in 4 minutes 28 seconds.  The key is to assemble everything you need before you begin timing and chopping.  I put spices, potatoes and crockpot on the counter the night before.  In the morning I pulled stew meat, carrots, etc. from the fridge.  Finding your ingredients and opening cans are not counted in my five minute prep time.  It's not my fault if you have to spend ten minutes looking for a can opener!

Crockpot Gluten Free Beef Stew

Ingredients:

1-1/2 pounds beef stew meat 1-1/2 pounds yellow potatoes 8 ounces baby carrots 1 small onion 1 cup red wine 1 - 14.5 ounce can diced tomatoes 1 tablespoon Worcestershire sauce 1 teaspoon salt 1/2 teaspoon pepper 1 bay leaf

Note:  I have ingredient amounts listed, but don't feel the need to be precise.  I like lots of potatoes so often I'll chop a big pile and throw them in the crockpot.  I'm not a huge fan of carrots, so I may add only a small handful. If I have frozen peas in the freezer, they may join the party. Likewise, I eyeball the seasonings, wine, and Worcestershire sauce.  No need to measure.

Directions:

Optional:  Set your timer.  Can you beat my 4:28 time?  (Please be safe - we are using sharp knives here!)

  1. Cut potatoes and onion into large chunks.

  2. Layer potatoes, onion and baby carrots (whole) in the crockpot.

  3. Top vegetables with stew meat. Season meat with salt and pepper and add a bay leaf.

  4. Pour diced tomatoes, wine and Worcestershire sauce over meat and give a quick stir.

  5. Cook on low for 8-10 hours. Enjoy!
